The outer edge binding looks to be the hardest part of making these?

I watched the video it looks easy except for the edge of the slippers. I have watched similar videos multiple times, and even though about tried myself but I have never tried myself. My mother can knit slippers and I think I will have to ask her to crate a tutorial like this one.
 
The outer part looks so hard. Anybody have any tips on how to make it more doable? Is there an alternative one can use?
Has anybody tried making this yet? How did they turn out? Do you find the jean material easy or difficult to work with?
